Our ricotta is made from whey, not milk. During the cheesemaking process the curds are separated out and the whey remains behind in the pot. We boil the whey, add a drop of vinegar and scoop off the light and fluffy ricotta curds. Enjoy as is with lots of olive oil, use in baking or as a pasta filling.
