Cream of the Crop
Cream of the Crop is a calf-at-foot micro dairy on Vergesig Farm, producing high quality milk and dairy products from our herd of Brown Swiss cows.
We operate on a Herd Share model, members invest directly into the herd and in return receive access to fresh dairy products, as well as exclusive access to the farm and events throughout the year.
Growing up on our family farm in the Jonkershoek Valley, we had two cows and my mom made the most delicious homemade yoghurt and labneh.
After training in patisserie at Île de Pain in Knysna, I went on to study at the University of Gastronomic Sciences in Pollenzo, Italy. Study trips took me to producers in Sicily, alpine dairy farmers in Italy, and farming communities across France, Japan, China, and Malta. Everywhere I went, the story was the same, farmers are underpaid, undervalued, and made invisible by a food system built on convenience.

South Africa is no different. We have become deeply disconnected from the source of our food, and it is the farmer who pays the price.
Cream of the Crop exists to change that. Our Herd Share model invites you to invest directly in the farm, to know your farmer, your cows, and know exactly where your food comes from.
