Our Tomme style cheese is made in the traditional alpine style. Using only the milk from our herd of Brown Swiss cows. The cheese is made straight after the morning milking using the still warm milk, our own starter culture and animal rennet. The rind is brushed once a day with whey and salt and allowed to develop its natural colour and flavour while ageing.
